Within this presentation, the German wine production, the basic chemistry, and the effect on the health of wine on the human body will be explained. A focus is given on the NMR spectroscopy, both at 300 MHz and also on new 90 MHz low field 1H and 13C NMR-spectroscopy. This way, the main components can be easily determined and quantified.
